Sow Seeds Indoors

Not typically started from seed. Buy root cuttings (thongs) from a nursery.

Outdoors

Plant root cuttings (thongs) in March, 30cm deep at a 45° angle. Choose the spot carefully — it's hard to remove once established.

Harvest

Dig roots from October onwards. The roots are hottest in autumn and winter. Lift as needed — leave some root to grow next year.

How to Sow

  • Buy root cuttings (thongs) about 15-20cm long
  • Plant at a 45° angle with the flat top 5cm below the surface
  • Space 30cm apart in deep, well-worked soil
  • Choose a permanent spot carefully — any fragment of root left in soil will regrow
  • Consider growing in a large, deep container (dustbin) to contain its spread

Plant Care

  • Water in dry weather during the growing season
  • Remove flower stalks to direct energy into root production
  • Keep the area weeded
  • Lift roots in autumn/winter — the cold intensifies the heat
  • Leave some root in the ground each year to regrow for the following season

  • Warning: horseradish is virtually indestructible and will spread relentlessly — growing in a sunken container is strongly recommended!
  • Freshly grated horseradish is incomparably better than shop-bought — mix with cream and a touch of vinegar for classic horseradish sauce with roast beef
  • The young leaves are also edible and add a mild peppery flavour to salads
