Plant tubers 10-15cm deep from February to March, spacing 30cm apart. They grow in almost any soil.

Harvest

Harvest tubers from November onwards after the foliage dies back. Lift as needed through winter — they store best in the ground.

How to Sow

  • Plant tubers 10-15cm deep and 30cm apart in rows 90cm apart
  • Choose any sunny or partially shaded spot — they're not fussy about soil
  • No special soil preparation needed, though compost helps
  • Each tuber will produce a tall plant (2-3m) with sunflower-like flowers
  • Consider a permanent bed as they're hard to completely remove once established

Plant Care

  • Water in dry weather during the growing season
  • Earth up the stems when plants are 30cm tall for stability
  • Stake in exposed positions — they grow very tall and can blow over
  • Cut stems to ground level after the first frosts kill the foliage
  • Leave tubers in the ground and dig as needed — they taste best fresh

  • Be warned: once you plant Jerusalem artichokes, you'll have them forever — any tiny tuber left in the soil will regrow!
  • 'Fuseau' is the smoothest-skinned variety, making them much easier to prepare in the kitchen
  • Roasted with olive oil and garlic, they have a wonderful nutty, slightly sweet flavour — far better than their reputation suggests
